Crescendo blanc Chasselas
Along with the Gamaret, my wood-aged Chasselas is my special pride and joy. In theory not meant to come into contact with oak, this wine is probably the exception that confirms the rule. A careful selection of the finest bunches is fermented in barrel to transform this Chasselas into a great wine worthy of the most refined table.
It displays remarkable freshness and is accompanied by a symphony of exotic floral aromas. The wine is rich, but not at all heavy. It has a long aftertaste with silky tannin that accounts for the elegant texture. Enjoyable with refined dishes such as foie gras and smoked fish, it is also a treat with delicatessen meats and flavoursome cheeses.
